Pike Creek 21-Year-Old Oloroso Cask Finish Whisky

Dr Don Livermore’s finesse as a blender is on full display in Pike Creek’s 2019 Corby Craft Rare Range Series entry. This time, the doctor gave his 21-year-old whisky bed rest in Spanish oloroso sherry casks. The finishing did wonders winning the whisky an award for best Canadian whisky at the 2020 Canadian Whisky Awards.

Old lumber swirls the nose with grace while sweet maple ignites a fuse on the nose that explodes on the palate like a depth charge pulling all the flavour into a unified centre. Sweet, nutty and creamy with sugar-coated raisins drenched in oak lead the whisky into a long spiced fruit finish.
