Long Table Distillery's London Dry Gin

In February 2013, the Long Table Distillery fired up Vancouver’s microdistilling scene in a former car repair garage. They were the city’s first, premiering with a flagship London Dry Gin that peeled out of that garage and into the glass if gin lovers.

Distiller Charles Tremewen built the gin's engine around a neutral grain spirit and a fine-tuned list of botanicals that macerates in the spirit for 24-hours. The juniper-forward infused spirit enters the still along with another healthy dose of the same botanicals. Three five-hour distillation runs later; the flavourful spirit is collected and proofed to 44% with British Columbia's coastal mountain water. The batch is allowed to rest and marry for at least two weeks before bottling.

Tremewen and the team spent four months developing their prized botanical recipe. The result welds the flavours of Canadian juniper and coriander along with sweet Italian juniper, orris root, angelica, fresh and dry lemon, dried orange, fresh grapefruit, black pepper, fennel and grains of paradise. The gin fires on all cylinders with piney juniper balanced and citrus that effortlessly shifts gears into beautiful black pepper notes with a subtle late palate vegetal undertone. "We are very passionate, love gin and want to make great products," says Tremewen. And he has nailed it in this essential Canadian style dry gin.
