Winter Feast Gin

The Willibald Farm Distillery and Reid’s Distillery have combined their gin superpowers into making Ontario’s first collaborative gin. The supergroup found their inspiration in what a winter’s feast means to them. They then took those elements and converted it into this gin.

The process starts with Willibald Farm’s rich and flavourful corn, rye and malted barley distilled base spirit. Reid’s then macerated the base spirit with juniper, garden-fresh and dried rosemary, cocoa nibs, roasted hazelnut and clove to cover all flavour aspects of a meal. Essential oil-rich clementine peel is then vapour infused into the mix.

The gin was too delicate for Willibald’s signature oak ageing. Instead, they worked with a Toronto tea sommelier to find a green tea that could be infused into a neutral spirit then blended into the gin. Dragon Well tea fit the bill to bring out the gin’s sweet and round middle notes that flow naturally to down-home spice and late palate clementine rind all supported by a whack of juniper. Winter Feast is a gorgeous sipping gin that shines a spotlight on Ontario’s growing gin scene.
